When Chef Kevin O’Connor tells you he wants to cook up some food on the tailgate of his truck – you drop everything, grab the camera and say, “When and where?” Along the Delta is a [very] small town named Locke. We met here, hopped in the truck and found the perfect spot right along the river where Kevin grilled up some sausages and dandelion greens, foraged for some mustard which he added alongside dill to the asparagus, and threw together carrots with fresh ricotta, smoked pine nuts and herbs.
